Grilled Chicken Deluxe Sandwich

Say hello to this delicious, and healthy, version of a famous Chick Fil A Classic!

Ingredients

  • 2 Chicken breasts sliced thinly, lengthwise
  • 2 TBSP Smoked Paprika
  • 1 TBSP Kosher salt
  • 2 tsp ground black pepper
  • 2 tsp garlic powder
  • 1 tsp dried oregano
  • 1/2 tsp onion powder
  • 1/2 tsp dried thyme
  • A few loose leaves of Bibb lettuce
  • 4 Buns of your choice

Tomato Jam

  • 2 lbs Roma tomatoes chopped
  • 1/4 cup Light brown sugar
  • 1/4 cup raw honey
  • 2 TBSP Apple Cider Vinegar
  • 1 TBSP Grated ginger
  • 1 tsp Kosher Salt
  • 1/4 tsp Ground Cinnamon

Honey Mustard

  • 1/2 cup mayonnaise
  • 2 TBSP Honey
  • 2 TBSP Dijon mustard
  • 1 TBSP Yellow mustard
  • Dash of black pepper

Chicken Sandwich Directions

  1. Preheat your grill or grill pan on medium-high heat until very hot (5-10 minutes).
  2. In a small bowl or container, mix all of the spices and seasonings until a uniform spice blend is created. Coat the meat with a light layer of oil and season with the prepared spice mixture. Set the seasoned chicken aside for 20-30 minutes while you make the remaining components.
  3. Once your fixings are made, place the chicken breasts on the grill and cook over medium-high heat for 4-6 minutes on each side or until the thickest part of the chicken reaches an internal temperature around 160 and 165 degrees F. Allow the chicken to rest for a few minutes before plating
  4. To assemble the sandwich, begin with a light layer of honey mustard, followed by lettuce, chicken, tomato jam, and more honey mustard.

Tomato Jam Directions

  1. To a saucepan over medium-high heat, add the chopped tomatoes along with the remaining ingredients and bring the mixture to a boil, stirring frequently with a rubber or wooden spatula. 
  2. Reduce the heat to a simmer and stir every 2-3 minutes, until the mixture has thickened to the consistency of a loose jam. This can vary depending on the size and material of your pan, but on average, it will take about 30 minutes.
    1. Remove from the heat and allow the tomato jam to cool to room temperature. Use immediately or transfer to an airtight container and store in the refrigerator for up to 1 week.

Honey Mustard Directions

  1. Add all ingredients to a small bowl and whisk until smooth and combined. Refrigerate for up to 1 week or use immediately.

Tips:

  • Lightly basting the chicken with melted grass-fed butter or coconut oil is a great way to ensure even cooking and consistent flavor

  • For a more true burger joint experience, toast the buns in a bit of unsalted butter or neutral oil
